Change in the air…

Short days and long nights leave the appetite craving slow cooked flavors.  Whole roasted garlic adds depth of seasoning to any fall recipe.  The fiery bite giving way to a mellow nuttiness.By the same tocken the 2008 Domaine Hubert Lamy St. Aubin Close de la Chatenière 1er has transformed into a maturing expression of French Chardonnay.  At eight years old this wine has years of life left with a pithy bitter lemon finish and mellow hazelnut, apple and chalk  notes on the nose and palate.  It is a reminder of the subtleties of well made white Burgundy

With a refreshing glass of wine in my glass, the garlic cooling on the stove top I’m thinking an easy dinner of crostini and salad are in order.  Most of the work has been done already.  The bread must be sliced and grilled.  The garlic is unwrapped from its papery cocoon.  Combined with halved cherry tomatoes, parsley, and basil in the pan – deglazed with a splash of the chardonnay.  The crostini is piled high and finished with a generous slug of olive oil.
