Even on the busiest of days…

there is time for “an omelet and a glass of wine”, so said Elizabeth David.  Some nights it comes down to timing – what can be prepared with a minimum investment of effort with maximal results.

Eggs rocketed to the top of that list tonight.  Eggs with fine herbs, garlic, and a glass of red wine.  It was no omelet to be sure.  The custardy just cooked eggs with the added complexity of herbal green notes from the chopped parsley and nuttiness from minced garlic checked all the boxes for a deeply satisfying meal.

The 2013 Herdade do Peso Alentejo had been opened the night before.  The day of rest and slight oxygenation had mellowed the wine.  It’s big red fruit flavors tempered by naturally high acidity and fine dusty tannins.
