Delicata squash is easy to love. It’s tender, sweeet, and more forgiving than its brethren. The cylindrical shape makes it easy to clean out the interior once split open. The skin itself remains tender throughout the cooking process; one less step, one less utensil to pull out. The striped skin also provides a nice contrast on the plate.
Tonight’s Delicata were split, cleaned, and sliced. Sautéed in butter with a tablespoon of maple syrup added before finishing the toast in the oven.
The end result is a tender squash dish with that sweet-savory twang that only maple syrup can produce.
