The toasty smell of baking wheat permeates the air. The night feels warmer already with a loaf of bread in the oven.
In terms of bread families soda bread could be classified as a quick bread. In a quarter of the time it takes to bake a loaf the dough is ready for the oven. There is no yeast involved. It removes the complication of proofing (or over proofing) the loaf before the bake.

Preheat the oven to 400˚F. The soda bread will take about an hour to bake in the oven. Allow to cool slightly before moving to a wire rack. Oil or butter your baking tin.
- Whole wheat flour 400g
- AP Flour 75g
- Baking Soda 1t
- Salt 1t
- Egg 1
- Oil 1T
- Honey 1T
- Buttermilk (soured milk) 425mL
Sift the dry ingredients. Measure and mix the wet items. Make a well in the bowl with the dry ingredients. Add the mixed wet ingredients. Stir together in a gentle but firm motion. Scoop the dough into the prepared pan. Bake for approximately 1 hour.
You can’t go wrong with a still warm slice of soda bread smeared with butter and marmalade. Enjoy!
