Crunchy Kraut-y

Cabbage salad with enough crunch to wake up those hibernating until the days are longer. 

  • Cabbage
  • Apple
  • Carrot
  • Ginger grated
  • Lemon, juiced and zested
  • Olive oil

Once again the measurements are proportional. The cabbage and carrot take center stage.  The apple brings supporting crunch as well as a touch of sweetness.

Julienne the cabbage.  Toss with grated ginger, lemon zest, and salt.  Set aside.  

Thinly slice or julienne the apple and carrot.  Drain any liquid from the bowl with the cabbage.  Then add the remaining ingredients. Finish with olive oil.  

Crunch and lunch the night away.
