Jam. Doughnut. Muffins.

These muffins are not what they seem.

Adapted from Nigella Lawson’s How To Be A Domestic Goddess,

  • Milk 1/2 c
  • Oil 7T
  • Egg 1 whole
  • Vanilla paste 1/2t
  • AP Flour 1 1/3 c
  • Baking Powder 1 1/2 t
  • Baking Soda 1/4t
  • Salt 1/4t
  • Sugar 1/3c
  • Jam 12T
  • Butter 1/2c, melted
  • Sugar 1/2c

Preheat the oven to 375˚F.  Line your muffin tin with muffin cups.  I was only able to make 6-7 muffins with this recipe.

Whisk together the wet ingredients except for the jam, melted butter and 1/2 cup of sugar.  In a separate bowl combine the dry ingredients.  Reserve the melted butter and 1/2 cup of sugar for after the bake.  Keep this measure of sugar in its own bowl.  Do not mix it with the butter.

Fold the wet ingredients into the dry. Scoop a heaping tablespoon of the batter into the prepared muffin cups.  Cover with a table spoon of jam. Any flavor of jam will work.  The recipe will work best with looser preserves like strawberry, raspberry, or apricot.  Finish with a second heaping of the batter.  Bake for 20 minutes.  Rotate once half way through.

When the muffins are still warm dip the tops in the melted butter and roll them in the sugar.  Pure indulgent muffins masquerading as doughnuts!
