Tender spring veg are one of life’s great joys.
Throughout the season carrots abound. They can be found in recipes for deep, flavorful braised brisket to refreshing aqua fresca with lime. Their ubiquitous presence puts them in the running year in and year out for ‘Most Dependable Vegetable’.
It is in the spring time when they shine the most on their own. Simply roasted in a hot, hot oven (375˚F) after being anointed with olive oil and sparingly seasoned. Remove the tops if you are concerned about them burning. The quartered pieces emerge after a few minutes with an unforgettable sweetness.
Garnish with chopped fresh herbs: chives, cilantro, parsley, or basil. The best of the garden come together.
