Crisp Crostini

Back home summer is in full swing.  Even on the laziest of days it is easy to pull together  a flavor packed meal.  The one requirement this time of year is to keep cooking indoors to a minimum.

The baguette was sliced thin on the bias to maximize the amount of real estate available for the crostini toppings.  The slices were toasted in a mix of butter and olive oil in the cast iron pan long enough to get a golden finish.  Not too long that the kitchen became unbearably hot.

Waiting in the wings were chunky slices of cucumber, torn pieces of fresh mozzarella, and basil roughly chopped.  Hummus was spread liberally on each slice to act as the glue to keep it all together.

Dinner in no time at all had flavor, freshness, and texture.  All enjoyed out on the patio to take advantage of the languorous summer nights.
